1971 240z brake booster swap?
I think you will find your booster is salvageable. It really doesn't look that heavily corroded. I would prefer to have a booster shop rebuild the unit, because of the less than stellar work that is often found in reman boosters and dealing with a local business. If you have them do it and they do a good job. Post them up for others to support them.

I found some online links for the Nissan FAST. Many of them are dead. Even the Nico site has removed all it manuals because of a letter from Nissan NA. Unfortunately I hadn't downloaded the entire 350z manual yet. I did some searching and found a similar year on another website. I recommend if you need any of these manuals, go ahead and search and download them before Nissan purges them all. I may continue to work on getting the Nissan software at some point, but I did find this site http://nissan4u.com/parts/350z/el_z33/2005_6/type_5/ that has pretty good diagrams, but they don't have all of them

Wheelbase predicament
If you use the techno suspension parts you will probably be ok. I would be worried there is not enough adjustment to get the alignment right with the factory parts if the cross member is 1/4" out of square with the car... That is provided I understood your description properly...

This is where the second links lead: Page 404 In April 2018, Nissan North America (NNA) served notice upon Diyservicemanuals that the documents contained herein infringe upon the intellectual property rights of Nissan and demanded we immediately disable access to the contents of Nissan Service Manuals

So I know we have the car parts manual site that shows the Z's and the 510 parts diagrams. Is there a way to do this for the newer cars like the 350z? Thanks, C

OER dripping fuel inside barrels
Yes, it's possible you fed something into all the carbs at once. Trash out of fuel pump, blown out fuel filter...

Wild guess. Float needles...

1972 Float Adjustment ...
Do not mess with the floats!!!!! The car is not too rich for sure! If it drives good, leave it for a while, drive it in traffic and see if your idle issue is gone in traffic. Once you put some miles on it then we will double check you have it fixed. It is getting close... Unless Mark disagrees @Mark Maras

I agree. That is the plan of action. I am waiting for a coolant pressure tester before we pull the head. By the way I sent Brandon a PM. Haven't heard back yet...

Cody's Goon
I agree the engine will need to be replaced, and it still doesn't tell where the water is going. I will probably try to get this engine running for a little while longer just so the car isn't broken down for an extended period of time. that will buy me some time to build up a better engine
