Chasing engine issue in my 73
Silver 240Z's are popping up everywhere. Weird. Looks good. One thing that might fit some of your symptoms is a sticking vacuum advance breaker plate, if you have vacuum advance connected. You'd have high advance at idle and low throttle, then it should retard as you open throttle. The detonation might be from high advance because the plate is sticking. Pull the cap and see if the breaker plate moves freely. Mark Maras's suggestion will tell you if it's a fuel/air ratio problem. You should try what he suggested. Pull the choke.

240z values - 4 speed vs 5 speed
The ZX 5 speed does have the ratios closer together, 1st to 4th. So, should allow a person to stay in a narrower RPM range, for sporty driving. I wanted a 5 speed because highway speeds were buzzy and noisy when I first got my car back up and running. I thought that 5th gear would drop the RPM and make things smoother. But after I got the 5 speed in I also put a better engine in with properly balanced injectors and other parts that was super smooth all the way up to the high end. I ended up using 5th gear not much after that, the old engine had been just a noisy buzzy beast. But out on the 70 mph freeways the new 5th gear was nice even with the new smooth engine. I think the choice depends on how and where you drive. 4 speed 240Z's are collector cars, for shows and investment.

Zcardepot Header Experience?
Maybe he builds them to order and he got lazy on his picture taking. His BMW headers seem to be fully welded. Doesn't seem pleasant to deal with, whatever is going on. Just surprising that people who should know what's important don't show what's important. https://www.ebay.co.uk/itm/Top-End-BMW-2002-Shorty-E10-Exhaust-Header/164146687745?hash=item2637e7af01:g:xLsAAOSwFnFV8bQ3

I like the portable dance floor on the back. Or maybe it's a picnic table. Multi-purpose, you could do your auto repair work back there. Maybe that's it.

Electric fuel pumps
Looks like a nice pump. Everything is "stock", and it comes with fittings, straps and insulation. 4.5 psi at 30 gph. https://www.summitracing.com/parts/atx-e8016s

Yes, the goal is to know what pressure the injectors see.

Zcardepot Header Experience?
They hide the actual ports in their pictures. Probably the same 4 round, 2 square header. There's probably an offshore company making thousands of these for cheap, and people are just reselling them.

(Sold for $23,500 - no driving video, low rider, runs rich. Nice paint though, and a 5 speed) The red 5 speed 77 is already over the orange automatic 77 selling price. It's going to get good money. No driving video, and the seller says it "runs rich", stock 77 L28, plus it's so low, with wide tires, that it's probably barely drivable over any sort of bumpy road. BAT is the place to sell your Z, for sure. https://bringatrailer.com/listing/1977-datsun-280z-53/

Tails of Parting a 75 280z. Two sides to every coin.
You could sell that can of oil to that American Picker guy for 50 bucks. Pretty sure that coins have three sides.

So you're thinking about bidding on a car in an internet auction. Does this help? Makes me cringe. https://bringatrailer.com/listing/1972-datsun-240z-166/

Bucking during acceleration sounds like the typical lean AFM problem. But the black plugs suggest a rich problem. The video sounds like an ignition miss. Here's another simple check - the FPR vacuum hose. If the FPR diaphragm blew that would be a sudden problem. Check it for fuel, it should be dry. 1977 has the old weak ignition system with the ballast resistor. You should check it carefully. They fail on a consistent basis. Old. Forgot to say - check your fuel pressure if you can. Might be something simple like a failing fuel pump or a clogged filter.

And check for the simple stuff like rags or mouse nests in the air intake system.

You should put your videos on youtube. I wonder if the guys at the shop took it out for a spin. Did you record mileage before it went in? Might just be something disconnected. Did they work in the engine bay?

New booster, now sticky brakes
Not sure what you're looking at. This is for a 1973 240Z right? I had to go look at some of your other posts, you never said in this one. The Autozone part number you gave is there on Rockauto. That's why this seems extra weird. But it does show the smaller shape, which is what the AZ picture shows. Funny to learn though that Duralast = Cardone, for these reman parts. https://www.rockauto.com/en/catalog/nissan,1973,240z,2.4l+l6,1209170,brake+&+wheel+hub,power+brake+booster,1884

New booster, now sticky brakes
Here's what Autozone shows for a 73 240Z. And it is weird that the rod is set deep in the booster. AZ might be using the wrong database. https://www.autozone.com/brakes-and-traction-control/brake-power-booster/duralast-remanufactured-brake-power-booster-53-5104/44461_0_0

New booster, now sticky brakes
What brand is it? Give more details. Cardone is the big reman company. Here is Rockauto's picture of a Cardone booster.
