1972 240z Stalling after a few minutes of driving.
Maybe try daining tank to see what comes out. I you have debris then try running it from a jerry can of fuel (send and return to it), an you take a photo of the plugs. They could be fouling, Use NGK or Denso if you have them try disconnecting the choke cables and pushing the jets all the way up too

Try and cause the problem again then immediately check for spark. Compare the spark quality when your car is running well vs. when it dies. Also look at the tach immediately when it dies to see if the drops to zero. I'm guessing your electronic ignition, coil, or possibly a condenser in the ignition circuity is heating up then failing only at higher temperature.

280Z Full Restore in 5 months, hopefully.
Sounds like a dirty or failed injector or something upstream from it, try and connect the #5 INJECTOR to the #6 CONNECTOR and the #6 INJECTOR to the #5 CONNECTOR to see if the problem moves to 5. Cleaning all electrical connections in the EFI system is a good maintenance item.

Triple weber 40 or 45 ?
45's would be better for 2.8litre because you can expand air flow easier if you bore the block in the future. Chokes (venturi) from 32 - 34mm are recommended for l28 and 45dcoe. 32 gives more lower end torque. 34mm is recommended limit for 40dcoe. see chart below 33mm choke is crossover point where 45 starts to outperform 40 with same choke size

yup. I had ~ 650mi on the car with the rebuild just broken in and was just starting to readline it for the first time to tune the carbs. The hose popped off at its first redline... initially surprising then messy more that anything

S30 fastener cataloging
that was my optimism. I am finishing my garage and will get to it after that. I have a few restos in the queue. The 72 240z mentioned above is #2 so hopefully in the fall/winter I'll start.

Disconnect the TPS and drive it to see if rev limit goes away.

Pull the TPS connector and try with it disconnected.... so you have a 280z right? Check timing too.

Rating the factory 240Z fuel vent hoses
It goes to the driver side inner fender in 240z via a hard line. It is vapour line. On 280z' it goes to the carbon cannister near the passenger side of the rad.

Bellows (2) are more like plastic elbows and are up front in the engine compartment where the top rad support meets the fender.

Head, not sure if head gasket or head cracked at this stage.
Cracks usually occur in 3&4 (exhaust ports are side by side) and in 6 (hottest due to distance from rad and cool water flow). Heads with liners seem more prone to cracking. I would agree with you that the #1 is probably head gasket. Pulling the head is easy if you have some tools. This can save you money. If it is not a bearing, tire or vibration.....Is there something hollow and open to the wind? A pipe can sound if the wind is fast enough. We used to hold Coke bottles out the window when we were kids. The reference to an open sun roof makes me think wind. How are the air bellows that steer wind into the fender ducting? Try to identify which part of car (front, back, side where the sound is loudest....get a musician with good ears to be a passenger)- the winter from hell
