I've got my E88 apart now and cleaning, polishing everything. My cam lobes are nice and smooth just not shiny like I feel like it should be. Sorta dull grey, but smooth as butter. Should I polish them to a shinier finish? Does shiny mean worn?

I use a scotch brite pad only for refreshing metal surfaces like cams.   Too shiny/smooth and no oil will embed.

How many miles have been put on that cam since it was shined up?  That's the real issue, isn't it?
