Your best bet is to try to match the black paint ( usually a flat or satin ) lightly spayed then use a pick or something of that matter to clean or scratch out the letters and numbers.

BANZAI MOTORWORKS sells VIN plates (and many repro Stickers etc found on S30 Z cars) for 240Z's, I don't know if they offer them for 260Z's
