Old Datsun pickup, forget what model, Import Tuner Magazine project car a couple years ago, suspension mods and Nissan twin cam swapped in. Or even better, similar truck with high - wide stance, original 4 cylinder with twin Webbers built for 9000 rpm and off road / rally setup with Lexan windows, built-in ice chest and loud (it would have to be) stereo.

Any of a hundred or so great motocross bikes. Or if a plane counts as a vehicle, a Zero, restored and modded for air races.
